Are you looking for a vegetarian casserole for casserole night? Look no further! This recipe is so easy and incredibly yummy! Fajita Quinoa Vegetable Casserole is packed with protein from the quinoa and cheese (if you eat cheese).

My kids took a couple bites from the casserole, which is pretty good, they are so picky. A rule in our house is they need to take 2 bites of anything that is new, or that they think they wont like. Most times our 4 year old likes it, and our 7 year old doesn’t, hes the pickier one.

Ok so lets get right to the yummy Fajita Quinoa Vegetable Casserole Recipe…..

Ingredients:

  • 1 c. quinoa
  • 3 Tbsp olive oil
  • 1 package of fajita seasoning
  • 1 red bell pepper (thinly sliced)
  • 1 orange bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 medium onion (chopped)
  • 1 can (28oz) crushed or diced tomatoes
  • 1 can white beans (rinsed and drained)
  • 1 and 1/2 c. shredded cheese (cheddar or any kind you have)

Direction

1. Preheat oven to 375 degrees.

2. Cook quinoa according to the instructions on the box, or bag. Once fully cooked put it in a big bowl and set aside.

3. Put olive oil in a large skillet pan over medium heat. Stir in half of the fajita seasoning package and combine with olive oil. Add cut onions, and red, yellow, orange peppers. Stir the peppers and onions into the seasoning.

4. Cook the pepper mixture for 8 minutes with the lid on, stir often. Then add in the canned tomatoes and bring to a boil over medium heat. Reduce the heat and simmer for 8 minutes. Then stir in the white beans and remove from heat.

4. Pour the pan of cooked peppers, tomatoes and bean mixture into the big bowl of Quinoa. Add half of the shredded cheese and stir until mixed.

5. Now pour the whole bowl into a casserole dish and top with the remaining shredded cheese.

6. Put into the preheated oven for 15 minutes.

Can be served right away, or put into tins and frozen for another night.

If you freeze it, heat at 375 degrees for 45 minutes, or until heated thoroughly.
